Cheater’s Mousse Pie

Here’s the scenario: It’s 5:00 on a Saturday afternoon. Guests are arriving for a backyard barbecue in two hours. You still need to vacuum the house, swish some cleaner in the toilets, hide the piles of junk mail taking over your entry table, finish getting dressed, AND make dessert. Because your house elves tricked you into tossing them a sock and they’ve abandoned ship.

Or because you’re a procrastinator. Like me.

Or maybe you just want to make a little dessert to celebrate the fact that it’s Wednesday and you’re still alive. Unshowered maybe, but alive.

No matter, COOL WHIP Whipped Topping and a box of pudding to the rescue and in 15 minutes, you’ve got a little thing I like to call Cheater’s Mousse Pie.

Real chocolate mousse pies are kind of labor-intensive. Or at lease time consuming. Cheater’s Mousse pies are, well, not.

Here’s what you need:

Cheater's Mousse Pie

1 cup cold milk
1 small box chocolate pudding mix (instant)
1 pre-made graham cracker pie crust
1 large tub COOL WHIP

(I took photos of this process but I’m still learning my camera. And photo editing. So don’t laugh. Just make this and then eat it and then thank me.)

Step one:

Using a hand (or stand) mixer, mix together the milk and instant pudding mix on medium-low speed 2 to 3 minutes or until incorporated. Be sure to scrape the sides of the mixing bowl with a spatula so that you get all of the pudding mix.

Next, add half the container of COOL WHIP to the pudding and whip together on medium speed. The higher your speed here, the fluffier the mousse will be. Basically, you want to incorporate air into the pie filling.

Pour the pie filling into the pie crust and spread it around. This doesn’t have to be perfectly level, but it should be pretty evenly spread across the pie crust.

Refrigerate the pie for at least 10 minutes.

Teach your kid the best part of baking (or no-baking). Licking the beaters.

After the pie has chilled and the filling has set, use the remaining COOL WHIP to top the pie. If you have time and energy, you can add extras here, like toffee chips, or caramel syrup swirls, or crushed walnuts or pecans. But if you want something simple and easy, just the COOL WHIP is plenty.

When it’s time to serve dessert, slice the pie, plate it, eat it, and enjoy!

There you have it. Cheater’s Mousse Pie. It’s fluffy and just the right amount of sweetness. Perfect for summer. Or winter. Or Wednesday.

    Cheater Mousse Pie!! This was my Mom’s go-to recipe for when she was short on time/cash/patience and us kiddos were begging for dessert. Will have to make it again, thanks for sharing again!

    I found this recipe while searching the internet for a easy Chocolate Mousse Pie. Couldn’t be easier and so DELICIOUS !!!
    You can add Heath Chips, which makes for a different taste and texture.
